Berry season is here! If you’re like me, you love the sweet bounty of summer berries. But sometimes, it’s hard to find recipes that use them all. So I’ve compiled some delightful berry cobblers to help you use up those fresh strawberries, blueberries and raspberries (and blackberries if your local farmers’ market has them).

Triple Berry Cobbler

Ingredients:

  • 1 cup sugar, divided
  • 2/3 cup flour, divided
  • 2 cups fresh blueberries (or thawed frozen)
  • 1 cup sliced strawberries (fresh or frozen)
  • 2 tablespoons water or milk, optional (recommended when berries are frozen)
  • Preheat oven to 350° F. In a bowl, stir together ½ cup sugar and 3 tablespoons flour until well blended. Add blueberries; toss gently to coat evenly with the mixture of sugar and flour. Transfer fruit mixture to an 8×8-inch baking dish that has been coated with nonstick spray or lined with parchment paper. Sprinkle remaining ¼ cup sugar over top of fruit in baking pan; pour remaining 1 tablespoon flour over top of the sugar covering fruit completely so no berries are exposed. If desired, add water or milk around edges to help prevent sticking during baking process – but not too much liquid! Your goal is for this cobbler topping to be very thick so it can hold up against all that juicy filling beneath it during cooking time! Bake at 350°F for 45 minutes until bubbling hot throughout almost whole surface area including bottom crust section below surface level where there may still be some juices from cooked fruit juices seeping out underneath crust layer after being baked through enough on upper side surfaces where they were exposed more directly without having any other layers of dough covering them yet – just make sure those edges get nice and golden brown before serving off plate into bowls etcetera.»

  • Ingredients: 1 cup flour, 1 cup sugar, 2 teaspoons baking powder, 1 teaspoon cinnamon (optional), dash salt, 3/4 cup milk (or vanilla soy milk), softened butter or margarine for greasing pan; 9 cups sliced fresh strawberries; 2 tablespoons lemon juice; 2 tablespoons cornstarch; 1 cup water; 4 tablespoons brown sugar (packed); pinch ground cloves.
  • How to Make It: Preheat oven to 375 degrees F. Lightly grease a shallow 3-quart baking dish with butter or margarine. In large bowl mix flour, sugar, baking powder and salt until well blended using pastry blender or fork until mixture resembles fine crumbs. Add milk alternately with the melted butter or margarine until batter just holds together when pressed between fingers (do not overblend). Spoon half of batter into prepared pan then top evenly with strawberry slices and drizzle evenly with lemon juice and sprinkle with brown sugar then remaining batter on top of berries smoothing gently with spatula so all berries are covered by batter then sprinkle evenly over top with cloves pressing lightly into batter if desired Cover tightly with foil coated lightly in cooking spray Bake 35–40 minutes until golden brown around edges Uncover cake remove foil bake uncovered 10–15 minutes longer until crusty surface forms in bottom center Remove from oven allow cake to cool 20 minutes before serving warm

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Directions: Preheat the oven to 350°F. Lightly grease a 9×9 baking dish and set aside. In a large bowl mix together the sugar, flour, baking powder and salt until well combined. Then add in your berries and gently stir until they are well coated with mixture. Spoon mixture into prepared pan and bake for 45 minutes or until golden brown on top around edges. Sprinkle with powdered sugar before serving if desired!

Add the blackberries to a large bowl, sprinkle them with sugar and toss until coated. Add the flour, cinnamon, ginger, salt and butter and mix until crumbly. Pour half of this mixture into a greased 9×13-inch pan (or whatever size you choose). Top with blackberries then add remaining crumb mixture on top of that. Drizzle milk over top of cobbler batter in pan (1/4 cup or so) and bake at 350 for 40 minutes or until golden brown on top. Serve warm with vanilla ice cream!
