Easy Coconut Cream Pie Recipe: A blog with the recipe on how to make a coconut cream pie.

Introduction

This simple coconut cream pie recipe is a classic dessert, and it’s easy to make. The recipe calls for a few ingredients that you probably already have on hand, and it’s so good that once you try it, you’ll never want to use a store-bought crust again.

Ingredients needed: 4 egg yolks, 1 cup sugar, 1/4 cup cornstarch, 1 teaspoon salt, 2 cups coconut milk, 1 1/2 cups half-and-half, 3 tablespoons butter, 1 tablespoon vanilla extract, 1 (9 inch) pie shell, baked and cooled, 1 cup whipped cream (optional)

Ingredients needed: 4 egg yolks, 1 cup sugar, 1/4 cup cornstarch, 1 teaspoon salt, 2 cups coconut milk, 1 1/2 cups half-and-half, 3 tablespoons butter and 1 tablespoon vanilla extract.

In addition to these ingredients for the actual pie you’ll need a 9-inch baked and cooled pie shell (you can use a storebought one if you want). For topping I like to use whipped cream but if you don’t have time or want something lighter then just leave it out!

Directions on how to make the pie: In a medium bowl mix together egg yolks and sugar until smooth. Whisk in cornstarch and salt. Heat coconut milk and half-and-half in top of double boiler until steaming. Remove from heat and slowly add to the egg mixture, whisking constantly. Return the entire mixture to the double boiler and cook over hot water until thickened. Stir frequently. When thickened stir in butter and vanilla extract. Pour into pie shell. Cover with plastic wrap and refrigerate for at least 2 hours before serving. Cut into slices; garnish with whipped cream if desired.
