I’m a big fan of oat bars. They’re nutritious and filling, and this homemade version is pretty easy to make. The best part is that I can add whatever ingredients I want to them!

In a medium bowl, whisk together the butter, honey, and both sugars until combined. Add the egg and vanilla, and whisk until smooth. Pour the wet mixture into the dry mixture, stirring with a rubber spatula until fully combined. Fold in the chocolate chips.

Put 1/4 cup batter into each prepared pan and spread evenly across it (about 2 tablespoons per bar). Bake for 25-28 minutes or until golden brown around edges of bars; rotate pans halfway through baking to ensure even browning on top surface. Remove from oven when done cooking; let cool completely before cutting into 4 squares per pan (16 total). Makes about 16 servings depending on how big you cut them!

Remove from oven and let cool completely (about 1 hour). Lift the oat bars out of the pan by holding onto both ends of the parchment paper and transfer to a cutting board. Cut into bars (or squares). Store in an airtight container at room temperature for up to 3 days or in freezer for up to 3 months.
