How to Prepare a Ricotta Cake: A blog about how you can make a fresh ricotta cake.

Introduction

I am a huge fan of ricotta. I love it in all its forms, from fresh cheese to baked desserts. This is a recipe for how to make a ricotta cake that doesn’t require any special ingredients or equipment.

  • Ingredients needed:
  • 1/2 cup of cake flour
  • 1/2 cup granulated sugar
  • 3 eggs beaten (separate the yolks from the whites)
  • 1/2 tsp baking powder

Preheat oven to 350 F.   In a big bowl, combine all ingredients and mix until well combined. Pour batter into greased cake pan and bake for 20 minutes or until inserted toothpick comes out clean. Let cool before removing from pan. Cut into 8 slices.*

  • Ingredients needed: 1 lb fresh ricotta cheese, 3 tbsp confectioner’s sugar (powdered sugar), 1 tbsp vanilla extract, 2 tsp orange blossom water (available at specialty stores), 2 cups whipped cream (or heavy cream can be used as well). Mix together all ingredients with a hand mixer until fluffy and smooth.*

The second step of making a ricotta cake is to add the ricotta, eggs and sugar.

  • Add the ricotta to your mixing bowl and whip until smooth and creamy in texture.
  • Crack open your eggs into another bowl, then beat them together with an electric mixer or whisk until light and fluffy (you can also whisk by hand).
  • Pour in the sugar, mix well until dissolved, then add this mixture to the ricotta mixture from step one (the egg mixture will become very thick).
  • Now add some flour to your mixture: about 1 cup for a large cake pan (9-inch), 2 cups for two small pans (6-inch). Mix thoroughly with a spatula or spoon until thoroughly blended together with no lumps left behind!
  • Beat the eggs and sugar together until they are creamy.
  • Add the ricotta, vanilla extract and mix well.
  • Pour into a cake pan and bake at 350 degrees for 45 minutes to 1 hour.
  • Bake for 30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Note: If you want to make it into two smaller cakes, you can split the batter between two greased 9-inch cake pans and bake each separately at 350°F (177°C) for 25–30 minutes.
  • Add the eggs and sugar to the ricotta mixture.
  • Mix until well combined.
  • Pour into a greased cake tin, and bake for 30-40 minutes at 180 degrees Celsius or until golden brown on top.
  • Ricotta cake is a delicious and versatile dessert that you can serve at any time of the year.
  • It’s made with ricotta cheese, eggs and sugar—and it’s really easy to prepare in a variety of ways!
  • To get started, all you need is a store-bought or homemade sponge cake or pound cake!
